Cost Controller

Full-Time - Asheville


We are currently looking for a Food and Beverage Cost Controller

This individual will be responsible for the organization and realization of the monthly inventories.  Preparation of daily and monthly product cost reports with explanation and investigation of variances, both physical and in the general ledger.  Verification of vendor pricing for accuracy and waste management at all outlets.

  • Analyze menu item costs, establish menu pricing and recommend menu modifications for new and current items.
  • Research, analyze, explain and determine course of action for all material variances on a wkly and mthly basis.
  • Recommend pricing, portion and supplier changes as costs fluctuate as well as update all inventory sheets.
  • Responsible for ensuring the completion & integrity of all month end inventories for each of the F&B outlets.  Work towards all inventories becoming shelf to sheet along with lowering all inventory levels to standards.
  • Ensure proper receiving and transfer procedures through a controlled requisition and distribution system and enforced through proper authorization of requisitions.
  • Responsible for reconciliation of all General Ledger F&B inventory accounts on a mthly basis by designated dates.
  • Analyze and verify prices to vendor supplied big sheets.
  • Responsible for auditing invoices, credit memos due and product security on a monthly basis to ensure accurate food cost percentages.
  • Monitor revenues, covers, adjustments, product cost, etc. for accuracy and business volumes in the restaurants.
  • Cost controls on employee cafeteria.
  • Verify house charges and calculate their costs.
  • Other F&B Accounting and Auditing functions as needed.


2-4 year degree in Accounting required

Previous exp. in hospitality industry preferred

Previous Accounting exp.

Must have knowledge of F&B products

Ability to compute mathematical calculations and knowledge of computers with exp. in MS Outlook, Excel & Word

Ability to prepare statistical reports

Ability to handle, control and resolve difficult situations with strong problem solving and analytical skills
